NUTTY, SEEDY, FRUITY GRANOLA

Ingredients:

  • 260g Rolled jumbo oats* (Gluten free rolled jumbo oats are also available on our stall)

  • 200g Nuts (1 or more: Cashews*, Walnuts*, Pecans*)

  • 80g Seeds (1 or more: Omega four seed mix*, pumpkin seeds*, sunflower seeds*

  • 1/4 tsp Ground cinnamon*

  • 1/4 tsp Salt

  • 80g Coconut oil^ (melt for ease of mixing)

  • 80g Maple syrup^

  • 1/2 tsp Vanilla extract

  • 150g Dried fruit (1 or more: raisins*, apricots*, figs*, dates*)

^If you prefer sweeter and chunkier granola add up to an extra 40g each of coconut oil and maple syrup. 

Instructions:

  1. Preheat oven to 180oC. Line a large, rimmed baking tray with baking parchment*.

  2. In a bowl combine the oats, nuts, seeds, ground cinnamon, salt, coconut oil, maple syrup and vanilla extract and mix well. Pour into the prepared baking tray, spread and press into an even layer.

  3. Bake until golden brown, about 22 minutes, stir halfway and press back down into an even layer.

  4. Once cooked, remove from the oven and let the granola cool completely (at least 45 mins).

  5. Add the dried fruit (chop larger pieces into small chunks) and then tip into an airtight container, keeps for a couple of weeks.
